These stuffed mushrooms are filled with breadcrumbs, garlic, herbs, and cheese for a savory bite. Try variations like spinach & feta or spicy chickpea stuffing for a creative twist.

INGREDIENTS
•  12 large portobello or button mushrooms (about 500 g / 1 lb)
•  100 g breadcrumbs (1 cup / 3.5 oz)
•  2 cloves garlic, minced
•  1 onion, finely diced (150 g / 5 oz)
•  2 tbsp fresh parsley, chopped (30 g / 2 tbsp)
•  100 g grated cheese (cheddar or mozzarella) (1 cup / 3.5 oz)
•  2 tbsp olive oil (30 ml)
•  Salt and pepper to taste
Variation – Spinach & Feta:
•  100 g spinach, chopped (3.5 oz / 2 cups)
•  80 g feta cheese, crumbled (¾ cup / 3 oz)
Variation – Spicy Chickpea:
•  100 g cooked chickpeas, mashed (½ cup / 3.5 oz)
•  ½ tsp chili flakes (2 g / ½ tsp)
•  ½ tsp cumin (2 g / ½ tsp)

1.  Prepare mushrooms: Clean mushrooms and remove stems. Set caps aside, finely chop stems.
2.  Cook filling base: Heat olive oil in a pan. Add onion, garlic, and chopped stems. Cook until softened.
3.  Add breadcrumbs and herbs: Stir in breadcrumbs, parsley, salt, and pepper. Mix until golden and fragrant.
4.  Add cheese: Remove from heat and stir in grated cheese until combined.
5.  Variation – Spinach & Feta: Add spinach to the pan, cook until wilted, then mix with feta.
6.  Variation – Spicy Chickpea: Stir mashed chickpeas, chili flakes, and cumin into the breadcrumb mixture.
7.  Stuff mushrooms: Fill each mushroom cap generously with chosen mixture.
8.  Bake: Place stuffed mushrooms on a baking tray. Bake at 180°C / 350°F for 15–20 minutes until golden and bubbling.
9.  Serve: Garnish with extra parsley and serve warm.

1.  Don’t wash mushrooms under water — wipe with a damp cloth to avoid sogginess.
2.  Use panko breadcrumbs for extra crunch.
3.  Pre-bake mushroom caps for 5 minutes to reduce moisture before stuffing.
4.  Mix cheeses (cheddar + mozzarella) for a gooey, flavorful topping.
5.  Serve immediately for best texture — reheating may soften the filling.
