STUFFED BELL PEPPERS

INGREDIENTS
• 4 large bell peppers (about 800 g / 1 ¾ lbs)
• 150 g quinoa, uncooked (¾ cup)
• 400 g canned black beans, drained and rinsed (14 oz)
• 150 g corn kernels, fresh or frozen (1 cup)
• 1 onion, diced (150 g / 5 oz)
• 2 cloves garlic, minced
• 2 tbsp olive oil (30 ml)
• 100 g grated cheddar cheese (1 cup)
• 50 g grated mozzarella (½ cup)
• 1 tsp paprika (5 g / 1 tsp)
• 1 tsp cumin (5 g / 1 tsp)
• Salt and pepper to taste
• Fresh parsley or cilantro for garnish

1. Prepare the quinoa: Cook quinoa according to package instructions until fluffy. Set aside.
2. Prepare the peppers: Slice the tops off bell peppers and remove seeds. Place in a baking dish.
3. Cook the filling: Heat olive oil in a pan. Sauté onion and garlic until softened. Add black beans, corn, paprika, cumin, salt, and pepper. Stir in cooked quinoa.
4. Stuff the peppers: Fill each bell pepper with the quinoa mixture. Top with cheddar and mozzarella cheese.
5. Bake: Place in a preheated oven at 190°C / 375°F for 25–30 minutes, until peppers are tender and cheese is golden.
6. Serve: Garnish with fresh parsley or cilantro and serve warm.
