• 300 g butternut squash, peeled and cubed (2 cups / 10 oz)

• 1 onion, finely diced (150 g / 5 oz)
• 2 cloves garlic, minced
• 1 tsp dried thyme (5 g / 1 tsp)
• 3 large eggs
• 200 ml milk (¾ cup)
• 100 ml cream (½ cup)
• 150 g cheddar cheese, grated (1 ½ cups)
• 2 tbsp olive oil (30 ml)

4. Make the custard: In a bowl, whisk eggs, milk, and cream. Season with salt and pepper.
5. Assemble the quiche: Spread roasted butternut evenly in the pastry shell. Add the spinach-onion mixture. Pour custard over.
6. Top with cheese: Sprinkle grated cheddar evenly across the top.
7. Bake: Place in oven for 25–30 minutes until golden and set.
8. Serve: Allow to cool slightly before slicing. Garnish with fresh herbs if desired.
