SPICY HARISSA SALMON WITH COUSCOUS & ROASTED VEGETABLES picture

Smoky harissa salmon served with fluffy couscous and roasted Mediterranean vegetables makes a vibrant, complete dish in 25 minutes

INGREDIENTS
•  4 salmon fillets (600 g / 1.3 lb)
•  2 tbsp harissa paste (30 g)
•  1 tbsp olive oil (15 ml)
•  Juice of ½ lemon (30 ml / 2 tbsp)
•  200 g couscous (7 oz / 1 cup)
•  250 ml vegetable stock (1 cup)
•  1 zucchini, diced (150 g / 5 oz)
•  1 red bell pepper, diced (150 g / 5 oz)
•  Salt to taste

STEP-BY-STEP COOKING INSTRUCTIONS
1.  Preheat oven to 200°C / 400°F. Roast zucchini and pepper with olive oil for 15 minutes.
2.  Mix harissa, oil, and lemon juice. Brush salmon fillets.
3.  Bake salmon for 12–15 minutes until cooked.
4.  Prepare couscous with hot stock, cover 5 minutes, fluff with fork.
5.  Plate couscous, top with salmon and roasted vegetables.
