Sosaties are South African marinated skewers of lamb or beef, now elevated with onion and peppers for a vibrant, smoky, and flavorful twist. Perfect for braais (barbecues), these skewers bring rustic charm and bold taste to your table.  

Ingredients 
- 1 kg lamb or beef ( sirloin is best) cubes (approx. 2.2 lbs)  
- 2 medium onions, chopped for marinade (300 g / 10.5 oz)  
- 2 medium onions, cut into chunks for skewers (300 g / 10.5 oz)  
- 2 bell peppers (red and green), cut into chunks (400 g / 14 oz)  
- 3 garlic cloves, minced (15 g / 0.5 oz)  
- 2 tbsp vegetable oil (30 ml / 1 fl oz)  
- 2 tbsp apricot jam (40 g / 1.4 oz)  
- 2 tbsp vinegar (30 ml / 1 fl oz)  
- 2 tbsp curry powder (20 g / 0.7 oz)  
- 1 tbsp ground coriander (10 g / 0.35 oz)  
- 1 tbsp brown sugar (12 g / 0.4 oz)  
- 1 tsp salt (5 g / 0.18 oz)  
- 1 tsp black pepper (5 g / 0.18 oz)  
- 12 dried apricots (150 g / 5.3 oz)  
- 12 skewers (wooden or metal)

- Prep time: 25 minutes (plus 4–6 hours marinating)  
- Cooking time: 15–20 minutes  
- Total time: 40–45 minutes active, plus marinating  

Step-by-Step Cooking Instructions
1. Prepare the marinade: Mix oil, vinegar, apricot jam, curry powder, coriander, garlic, chopped onions, sugar, salt, and pepper in a large bowl.  
2. Marinate the meat: Add lamb or beef cubes, coat well, cover, and refrigerate for 4–6 hours (overnight for best flavor).  
3. Soak skewers: If using wooden skewers, soak in water for 30 minutes.  
4. Assemble sosaties: Thread marinated meat cubes alternately with dried apricots, onion chunks, and bell pepper pieces.  
5. Grill: Cook skewers over medium-hot coals or grill for 15–20 minutes, turning occasionally until meat is charred outside and tender inside.  
6. Serve: Enjoy hot with rice, pap (maize porridge), or fresh bread.
