INGREDIENTS
•  300 g tagliatelle (10 oz)
•  2 tbsp butter (30 g / 2 tbsp)
•  1 onion, diced (150 g / 5 oz)
•  250 g mushrooms, sliced (9 oz)
•  1 red bell pepper, diced (150 g / 5 oz)
•  1 zucchini, sliced (200 g / 7 oz)
•  1 carrot, grated (100 g / 3.5 oz)
•  1 cup peas (150 g / 5 oz, fresh or frozen)
•  1 cup corn kernels (150 g / 5 oz, canned or frozen)
•  1 tsp paprika (5 g / 1 tsp)
•  200 ml sour cream (¾ cup)
•  Salt and pepper to taste
•  2 tbsp chopped parsley (30 ml / 2 tbsp)

1.  Cook the pasta: Boil tagliatelle in salted water until al dente. Drain and set aside.
