LEMON HERB GRILLED SALMOM TROUT WITH ROASTED POTATOES & GREEN BEANS picture

This lemon herb grilled trout is paired with crispy roasted potatoes and tender green beans, making a fresh, balanced dinner in under 30 minutes. Hake is also a good choice is salmon is not available.

INGREDIENTS
•  2 whole trout, cleaned (600 g / 1.3 lb)
•  2 tbsp olive oil (30 ml)
•  Juice of 1 lemon (60 ml / ¼ cup)
•  2 tbsp parsley, chopped (30 ml)
•  1 tsp oregano (5 g)
•  400 g baby potatoes, halved (14 oz)
•  200 g green beans (7 oz)
•  Salt and pepper to taste

STEP-BY-STEP COOKING INSTRUCTIONS
1.  Preheat oven to 200°C / 400°F. Roast potatoes with olive oil, salt, and pepper for 20 minutes.
2.  Steam green beans for 5 minutes until tender.
3.  Rub trout with oil, lemon, oregano, salt, and pepper.
4.  Grill trout 5–6 minutes per side until flesh flakes.
5.  Serve trout with roasted potatoes and green beans, garnish with parsley.
