Lasagna Soup Recipe
Ingredients
- 1 tbsp olive oil`
- 1 medium onion, diced
- 3 cloves garlic, minced
- 500g ground beef or Italian sausage
- 2 tbsp tomato paste
- 1 can (400g) diced tomatoes
- 4 cups beef or chicken broth
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 6 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella
- Fresh parsley for garnish
Step-by-Step Instructions
Step 1: Sauté Aromatics & Meat
Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant. Add ground meat and cook until browned.
Step 2: Build the Base
Stir in tomato paste, diced tomatoes, and Italian seasoning. Cook for 2–3 minutes to deepen flavor.
Step 3: Add Broth & Noodles
Pour in broth, bring to a boil, then add broken lasagna noodles. Simmer for 10–12 minutes until noodles are tender.
Step 4: Finish & Serve
Ladle soup into bowls, top with shredded mozzarella and fresh parsley. Serve hot with crusty bread.
