Experience the rich flavors of Cape Malay cuisine with this Lamb Salomo wrapped in soft, homemade rooti. A comforting South African classic that blends tradition, spice, and soul.

INGREDIENTS
For the Rooti Dough:
•  500 g (4 cups) cake flour
•  5 ml (1 tsp) salt
•  30 ml (2 tbsp) vegetable oil
•  250 ml (1 cup) warm water

For the Lamb Salomo Filling:
•  1 kg (2.2 lbs) lamb, cubed
•  2 medium onions, finely chopped
•  2 cloves garlic, minced
•  15 ml (1 tbsp) ginger paste
•  2 medium tomatoes, chopped
•  10 ml (2 tsp) ground cumin
•  10 ml (2 tsp) ground coriander
•  5 ml (1 tsp) turmeric powder
•  5 ml (1 tsp) chili powder (adjust to taste)
•  2 cinnamon sticks
•  250 ml (1 cup) beef or lamb stock
•  30 ml (2 tbsp) vegetable oil
•  Salt and pepper to taste

STEP-BY-STEP COOKING INSTRUCTIONS
Rooti Dough:
1.  Mix flour and salt in a large bowl.
2.  Add oil and warm water gradually, kneading until a soft dough forms.
3.  Divide into 8 balls, cover, and rest for 30 minutes.
4.  Roll each ball into thin circles.
5.  Cook on a hot, dry skillet until golden spots appear, flipping once.

Lamb Salomo Filling:
1.  Heat oil in a large pot.
2.  Fry onions until golden, then add garlic and ginger.
3.  Stir in cumin, coriander, turmeric, chili, and cinnamon sticks.
4.  Add lamb cubes, browning on all sides.
5.  Add tomatoes and cook until softened.
6.  Pour in stock, reduce heat, and simmer for 1 hour until lamb is tender.
7.  Season with salt and pepper.
8.  Serve wrapped in warm rooti.
