    450g| 16 oz (1 lb) High-quality beef of chicken meat sausage (remove skins from sausages )
  • 500| 17 oz Ready-rolled Puff Pastry block or sheets (thawed if frozen)
  • 1 tsp Dried Sage
  • ½ tsp Dried Thyme
  • ½ tsp White Pepper
  • ½ tsp Salt
  • 1 tbsp Cold water
  • 1 Egg, beaten (for egg wash)

Step-by-Step Guide
Preheat: Oven to 200°C (400°F). Line a baking sheet with parchment paper.

Season Meat: In a bowl, mix the sausage meat with sage, thyme, white pepper, salt, and cold water until well combined.

Roll Pastry: Roll out the puff pastry on a lightly floured surface into a large rectangle, about 3-4mm thick. Cut the rectangle lengthwise into two long strips.

Fill: Divide sausage meat in half. Roll each half into a long sausage shape the same length as your pastry strips. Place the meat log down the center of each pastry strip.

Fold: Brush one edge of the pastry with beaten egg. Fold the pastry over the meat log and seal it tightly against the egg-washed edge. Use a fork to crimp the edge if desired.

Cut & Wash: Cut the long rolls into individual sausage rolls (about 4-5 inches long). Place on the baking sheet, seam side down. Score the tops lightly with a knife three times. Brush tops generously with egg wash.

Bake: Bake for 20–25 minutes until puffed and deep golden brown.
