Ingredients (Serves 4)

  • 4 bone-in chicken thigh or drumstick (skin-on for crispiness)
  • 2 tbsp olive oil
  • ½ cup fire-roasted red peppers, sliced
  • 3 cloves garlic, minced
  • ½ cup mascarpone cheese (luxurious creaminess)
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan
  • ½ tsp smoked paprika
  • ½ tsp chili flakes (optional for heat)
  • ½ cup chicken stock
  • 1 tbsp fresh thyme leaves
  • Salt & cracked black pepper to taste

Instructions

  1. Sear Chicken:
    Pat chicken dry, season with salt and pepper. Sear in olive oil over medium-high heat until skin is golden and crisp. Remove and set aside.
  2. Build the Sauce:
    In the same pan, sauté garlic and fire-roasted peppers until fragrant. Add smoked paprika and chili flakes.
  3. Creamy Base:
    Stir in mascarpone, heavy cream, and chicken stock. Simmer until smooth and slightly thickened.
  4. Finish with Cheese & Herbs:
    Add Parmesan and thyme. Return chicken to the pan, spoon sauce over, and simmer until chicken is cooked through (internal temp 75°C / 165°F).
  5. Serve:
    Plate chicken with extra sauce, garnish with fresh thyme sprigs and a drizzle of chili oil for drama.
