INGREDIENTS
• 2 brioche bread or 2 Portuguese rolls
• 100 g (3.5 oz) macon (beef bacon)
• 2 large eggs
• 1 medium avocado, sliced
• 80 g (3 oz) sharp cheddar cheese, sliced
• 60 g (¼ cup) tomato salsa
• 15 ml (1 tbsp) butter or margarine for toasting
• Salt and pepper to taste

STEP-BY-STEP COOKING INSTRUCTIONS

3. Slice brioche buns or Portuguese rolls in half and toast lightly with butter until golden.
4. Layer macon on the bottom half, then add cheddar cheese.
5. Place egg on top, followed by avocado slices.
6. Spoon tomato salsa generously over the layers.
7. Close with the top half of the bun or roll, press gently, and cut in half if desired.
