INGREDIENTS
• 500 g (1.1 lbs) chicken breast, thinly sliced
• 2 medium carrots, julienned
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 150 g (5 oz) broccoli florets
• 100 g (3.5 oz) sugar snap peas
• 1 medium onion, sliced
• 2 cloves garlic, minced
• 15 g (1 tbsp) fresh ginger, grated
• 30 ml (2 tbsp) soy sauce
• 30 ml (2 tbsp) oyster sauce (vegetarian alternative available)
• 15 ml (1 tbsp) sesame oil
• 15 ml (1 tbsp) vegetable oil
• 200 g (7 oz) cooked noodles or steamed rice (for serving)
• 1 handful fresh coriander (cilantro), chopped
• Salt and pepper to taste, sesame seed for garnish

STEP-BY-STEP COOKING INSTRUCTIONS
1. Heat vegetable oil in a large wok or skillet over high heat.
2. Add chicken slices and stir-fry for 4–5 minutes until golden and cooked through.
3. Remove chicken and set aside.
4. In the same wok, add sesame oil, onion, garlic, and ginger, stir-frying for 1 minute.
5. Add carrots, peppers, broccoli, and sugar snap peas, stir-frying for 3–4 minutes until tender-crisp.
6. Return chicken to the wok and add soy sauce and oyster sauce.
7. Toss everything together until evenly coated and heated through.
8. Serve hot over noodles or rice, garnished with fresh coriander and sesame seeds
