AMADOMBOLO – STEAMED DUMPLINGS
Soft, fluffy Amadombolo dumplings are a traditional South African comfort food, perfect for soaking up rich stews and gravies. This hearty dish is beloved for its simplicity, versatility, and ability to turn any stew into a filling, satisfying meal.
INGREDIENTS
- 500 g (4 cups) cake flour
- 10 g (2 tsp) salt
- 10 g (2 tsp) sugar
- 10 g (2 tsp) instant dry yeast
- 30 ml (2 tbsp) cooking oil
- 250 ml (1 cup) warm water
- 250 ml (1 cup) warm milk
STEP-BY-STEP COOKING INSTRUCTIONS
- In a large mixing bowl, combine flour, salt, sugar, and yeast.
- Add warm water, warm milk, and oil gradually, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough and divide into medium-sized balls.
- Place the dumplings into a greased, heatproof bowl or directly on top of simmering stew.
- Cover tightly with a lid and steam for 30–40 minutes until dumplings are cooked through and fluffy.
- Serve hot with your favorite stew or gravy.
HELPFUL COOKING TIPS
- Ensure liquids are warm, not hot, to activate yeast properly.
- For extra flavor, replace water with chicken stock.
- Do not lift the lid while steaming, as this will cause dumplings to collapse.
- Brush dumplings lightly with butter after steaming for a richer taste.
- If cooking directly in stew, make sure the stew has enough liquid to create steam.
